What is Balsamic Vinegar of Modena IGP?

IGP stands for “Indicazione Geografica Protetta”, in English Protected Geographical Indication (PGI). The name Aceto Balsamico di Modena is protected in the EU and bound by clear rules: it is made in the provinces of Modena and Reggio Emilia from cooked or concentrated grape must and wine vinegar, and it matures for at least 60 days in wooden barrels. The must comes from specified grape varieties such as Lambrusco, Sangiovese or Trebbiano, and the acidity must be at least 6 %. Up to 2 % caramel colour is permitted to adjust the colour.

This is different from Aceto Balsamico Tradizionale DOP, which is made from cooked must alone and aged for at least 12 years. And the word “balsamic” on its own is not protected at all: a vinegar that is merely called that does not have to meet any of these rules. This organic balsamic is a certified IGP balsamic vinegar, with no caramel colour and made from organically farmed ingredients.

Information about Balsamic Vinegar of Modena IGP, Organic, 500 ml

About the product

Organic balsamic vinegar from one house in Modena

Casa del Balsamico Modenese stands on the Via Emilia Est in Modena and is the Cattani family’s acetaia. Our Cattani Oro, a balsamic aged for 40 years, comes from the same house. This organic balsamic vinegar is its counterpart for everyday cooking. It is made from cooked grape must and wine vinegar, both from organic farming. The must brings sweetness, colour and body, the vinegar brings the acidity.

Balsamic vinegar without caramel colour: why it matters

Caramel colour is a colouring made from caramelised sugar. The IGP rules allow up to 2 % to make the colour of a balsamic uniform. So a balsamic that looks dark does not necessarily contain much must. In this bottle the colour comes from the cooked grape must and from maturing in wood; there is no caramel colour on the ingredients list.

What organic means for balsamic vinegar of Modena

Here, organic applies to both ingredients: the grapes for the must and the wine from which the vinegar is made come from organic farming in Italy. This is checked by an approved organic inspection body, whose code IT BIO 006 appears on the label, in addition to the IGP certification.

Frequently Asked Questions (FAQ)

What is the difference between IGP and DOP balsamic vinegar?

Aceto Balsamico di Modena IGP is made from cooked grape must and wine vinegar and matures for at least 60 days in wooden barrels. Aceto Balsamico Tradizionale DOP is made from cooked must alone and is aged for at least 12 years. Both are protected, but they are two different products.

Is this balsamic vinegar aged?

Yes. Every Aceto Balsamico di Modena IGP matures for at least 60 days in wooden barrels. No longer ageing period is stated for this bottle.

Does this balsamic vinegar contain caramel colour?

No. The ingredients list shows only cooked grape must and wine vinegar, both from organic farming. The IGP rules would allow up to 2 % caramel colour.

Why does balsamic vinegar contain so much sugar?

The sugar comes from the cooked grape must, which gives balsamic vinegar its dark colour and its sweetness. There are 49.1 g per 100 ml. As balsamic is usually used by the spoonful, the amount per serving is small.

How do you use balsamic vinegar of Modena?

The classic use is a salad dressing with olive oil, salt and pepper. It also works with grilled or roasted vegetables, with tomatoes and mozzarella, in sauces and braises or, reduced, over strawberries.

Does balsamic vinegar go off?

Unopened, it keeps until the best-before date on the bottle. Tightly closed and stored in a cool, dark place, it also keeps for a long time after opening. It does not need to go in the fridge.

How does it differ from Cattani Oro?

Both come from the same house in Modena. Cattani Oro is an Aceto Balsamico di Modena IGP Invecchiato, aged for 40 years and used drop by drop. This organic balsamic is made for everyday cooking: for salads, vegetables and sauces.

Who makes this balsamic vinegar?

Casa del Balsamico Modenese on Via Emilia Est in Modena, the Cattani family’s acetaia. The balsamic is made and bottled there.

Where do the ingredients come from?

From organic farming in Italy. Organic certification is carried out by the inspection body IT BIO 006.
